Our sugar cane takes about two years to grow.

Harvest of Sugar Cane

We typically harvest the sugarcane in the spring. The sugar cane is at its best and sweet. 

Traditionally in the region people would make brown sugar or Rum.

Mill

Once the sugarcane is cut then it is brought to the mill. There are three ways to mill sugar cane in the region. We will update soon pictures of the different operations

Freshly Cut Sugar Cane

We aim to mill and juice the sugar cane right after a couple of hours its has been cut.

Fermentation

To build a " mother " fermentation to kick off, it takes about two weeks to build. Typically in the region we get help from corn. Once you have a mother fermentation, it takes 24 hours to ferment the sugar cane juice to be ready to distill.

Distillation

Once ready, the fermentation is placed into our copper alembics to be distilled twice. the second distillation we do it in a stainless steel alembic.

Bottling

The final product is bottled by local women from our village, they help us with the labels as well. Once labelled, the bottles are boxed and sent to Oaxaca where they will be dispatched to the world. This part of the process is similar to what we do with Mezcal Tosba.
